Happy Anniversary

Today is our two-year anniversary.  Two years ago we had the most perfect day on Tybee Island, and a great night in Savannah celebrating with everyone we love.

Kevin, Happy Anniversary love.  You continue to make me happy and feel like the most important thing in the world.  I’m a lucky girl…

Cooking For One

I really hate when Kevin is out-of-town, but we both deal with it.  I talked about it over on Nikki’s blog a while back.  Well, he’s out-of-town this week, and although I’ve missed him terribly I’ve enjoyed not cooking too much.  Now, Kevin has never once expected me to cook dinner, actually he’s the one who cooks most of our meals.  However, when he’s gonna be home late and I’ve been home all day it’s the least I can do.  While he’s been away I’ve pretty much snacked all day and have not been too hungry for dinner.  I do have the opportunity to cook some of the meals I like, that may not be Kevin’s favorite, or I can cook meals that don’t have meat involved.  You all know I am a meat-eating southern girl, but to be honest, sometimes I just don’t feel like dealing with the protein of the meal.

So tonight was one of those nights.  I just looked through my pantry and created this pasta dish.  It was very delish.

These are all the ingredients you will need.

And a small onion.  I decided to add this after I took the picture.

Heat about 1/4 cup olive oil in a skillet. Add about 1 teaspoon of garlic (or more depending on your love for garlic) and a few shakes of red pepper flakes (or more depending on your love for red pepper flakes).  Cook for a few minutes but don’t let it burn.

Meanwhile cook the pasta.

I saw on Pinterest if you put a wooden spoon over the pot it won’t boil over…it works, we do it every time.

Also, meanwhile, caramelize some onions.

Now you can add your drained tomatoes to the olive oil.

You can see how you’re gonna have a nice little sauce.

Once the onions are done add them to the tomatoes.  Then drain the pasta and throw that in too.

Mix together and that’s it!

Of course I add a little Parmesan.

What I loved about this was you instantly taste the heat from the red pepper, but then some sweetness from the caramelized onions.

You can easily adjust this to your liking.  You can add chicken or shrimp, and any other veggies you had on hand. I also think a few sun-dried tomatoes would be good. Oooh and maybe some feta sprinkled on top…

I also have  a feeling that this may be one of those pasta dishes that is good cold right out of the fridge.  I can let you know as I’m sure I’ll be enjoying my leftovers tomorrow.

This is What I’ve Been Up To…

I’ve been a bad blogger the past few weeks, and I have no excuse so I’m not going to try to come up with one.  I’ve been busy (is that an excuse?) and have done a few projects that I want to share.

I’m working on Vanessa’s baby bedding for Baby Gray who will make his arrival in October.  This is his crib bumper, although it’s not quite finished.  You will certainly see the end results either here or on her blog, or both!

The nursery colors are grey and orange…

I made this shirt/swimsuit cover.  I found this cool, sheer material and instantly thought cover up.

(Obviously you won’t see me in a swimsuit unless you are in the sun with me…)

It’s very flowy and off the shoulder.  I’ve worn it and it looks real cute over my black suit.

I made a new wreath for our door.

I just stuck some hydrangeas in one side and attached an “H” to the other…

And finally, I made these pillows.

(The green ones.)  I picked up this fabric at Michaels, on sale for $4.00, and I already had some pillow inserts we weren’t using.  I love a mix of textures, but knowing me, these will make a trip to every piece of furniture until I make a final decision.  (Looking at the one on the right reminds me that Mona likes to lay on the pillows too, hence the squashed appearance.)

So that’s it for now.  I have a few things on my list to do, and I plan blogging a bit more frequently.  No excuses.

Randomness

I decided on a completely random post full of random pictures from my everyday life.  I feel as if I’ve overloaded on sewing posts lately, so this is a bit refreshing and fun for me.  (And slightly random but I warned you in the title)…

First of all, great news, I found this today.

I’ve seen this on Pinterest, and I’m afraid this won’t be good for swimsuit weather.  Who cares, I’m a Nutella addict and this is really good!

This is my next pool read. (After I finish the last Fifty Shades of Grey which I admit embarrassed.  What? I had to see what the fuss was about?  Who wants to discuss this with me?  Anyway, my next read…

Kevin is reading it now and says it’s good.

This was Kevin’s Christmas present.  It’s huge, and we love it.

Glad I have a husband who understands my love of shoes…

Why aren’t they in the closet you ask?  Well, it too is full of shoes.  These are the ones he rotates through everyday while coaching.

Kevin and I decided on traditional anniversary gifts to each other.  First year, paper.  He gave me this.

It’s a canvas of the letter he gave me before our wedding.  It’s a love letter written from song lyrics.  It may be my favorite thing ever.

Speaking of a canvas…

This is another one of my favorite possessions.  It was a gift from Vanessa (who also took the picture). It hangs in a perfect spot in our bedroom.

Mona.  Our little love.  She could care less about the big camera in her face, but hates my phone.  She allowed me to get closer and closer to her.  I love these.

Sweet girl.

And finally the thing that I have to say has been more healing and therapeutic to me.  (Other than my wonderful husband)

Sounds dramatic I know, but when I’m feeling down this always keeps me occupied and gives me quite a sense of accomplishment.

Well this was fun!  I have a ton of randomness quite often, so I’m certain you’re going to see more posts like this.

Fifty Shades of Grey…anyone?

Random Post

I’m still here!  I’ve been taking a little blogging break since I am on spring break, but I’ve been super busy with projects to blog about! Some of which are…

  • We painted our kitchen cabinets….remember when my sister painted hers?
  •  I made a sign for our kitchen.
  • We went to Tybee.
  • I made a clutch.
  • I made a driftwood wreath…LOVE IT!
  • I am in the process of making a shirt, tunic, or something….I’m undecided how it will turn out but I’m loving it so far…(Unless I really mess it up which is possible)
  • We’ve tried some really great recipes, and even created an original.
  • And that may be it…Oh!  I will be guest blogging on another great blog soon so stay tuned!

So, with all that going on I should have some great posts to share real soon.  Is there anything specific you would like to try to see me re-do or make?  I’m open to suggestions and plan to take a trip to Goodwill tomorrow to try to find some stuff.

Redneck Rumble

This past weekend we took a trip to Shiloh Plantation in Ehrhardt, South Carolina for the 2nd Annual Redneck Rumble.  This is a trip we take with a great group of friends and let me tell you, it is a blast!  It’s a bit different from our my day-to-day routine, however I look forward to the 3rd annual rumble….

First up, the cast of characters….

In no particular order, here are some of our activities…

We wore the same shirts,

Shot guns, shot skeet,

(The girls can shoot btw…)  I didn’t get a picture of us with the guns.  Boo.

We fished,

We took romantic boat rides,

Took a lot of random pictures,

We saw buffalo,

Rode ATV’s,

And killed a bear,

We also enjoyed sitting by the campfire, playing games by the moonlight, and just really enjoying each other.  I can’t wait to get my redneck on again next year!!

 

My Birthday…

I have to tell you about my birthday. I’m gonna give you a hint, it has something to do with red soles…
For my birthday Kevin made plans to take me to Ruth’s Chris. It’s probably one of my all time faves. This girl likes steak. Anyway, when he got home from work he had a birthday present, a French Roast coffee press. We’ve both wanted one for a while. Loved it. So once we got dressed we went to our 7:00 reservation. On the table at the restaurant was a wrapped present. This guy spoils me.
We had some bubs (which btw, champagne is quickly becoming my favorite drink) and our appetizer. He asked me if I wanted to open my present (that had been staring at me the whole time, and I did notice it was the size of a shoe box…) so obviously I said yes.
This is what I saw as I carefully took ripped the paper off…

Yep a Christian Louboutin box. Since we were in a public place I couldn’t have the reaction that I would have had at home, however my heart skipped a beat and I may have squealed.
And these beauties were inside.

I love them. And he picked them out with the thought that the shorter heel would allow me to wear them to work, or just wear them more often that I wear my other pair. I will for sure. I have been wearing them around the house to break them in. (Well, and maybe to just wear them.)

What a great night, what a great husband. He knows what I like. After a great night out we went home where he had 2 small cupcakes waiting.
Wonderful shoes aside, here is the thing about Kevin. He knows me well. He knows exactly what I need and when I need it. We have an unhappy date quickly approaching us, and there are certainly days where we both feel heartbroken and not quite ourselves. Kevin knows exactly how and when to reel me back in and refresh me with love and support. Simply giving me wonderful night out with some laughs and love was just the reminder I needed to kick me out of my funk. I really hope I do the same for him.
So, anyway, what do you think of my new addition?

So much to say…but it will have to wait.

I will be away from blogging a bit as we are having Internet issues which require someone to come out and fix it…but not until Wednesday.  And I have so much to share, from my birthday to some projects I’ve completed….

11 random things about me:

  1. I hate pumping gas, hate it.
  2. I have a small bought of amnesia from when I was in the 6th grade.  I passed out, and hit my head hard enough to cause this.  I remember that morning, and then remember being in a hospital. Still have no memory of it.
  3. I had meningitis in college.
  4. I would love to have really short hair but I know I will never do it.
  5. I cannot watch those sad animal commercials; you know the one with Sarah Mclachlan.  I change the channel.
  6. I am a little OCD about setting my alarm clock.
  7. I am not that organized, however my closet is.  It is separated into categories, and color coded.
  8. I have a close and unhealthy relationship with the sun.  I am a bit obsessed about getting to the pool or beach in the summer.
  9. I want to write a book with my sister.
  10. I love naps.
  11. I would move to Savannah Georgia tomorrow.

  1.  What is your favorite movie?  Lost In Translation.  I watch it every time it’s on, and it has so much meaning.  It’s one of those movies that leaves you wondering.  If you haven’t watched the movie this clip may be spoiler alert, but this last scene says it all.

2. What is your dream vacation? A private island with staff, but with a yacht to take us back and forth into a great coastal town to eat and shop as we wish.

3. If money were no object, what would you do for work?  I would start a business with bounty hunters to track down people who are cruel to animals.  Or something in fashion…

4. Do you watch documentaries? Yes, but mostly entertainment docs.  I actually love a good documentary.  The last one I watched was probably something on the Mob.  I kinda like the Mob.

5. What is your Favorite restaurant? The Olde Pink House in Savannah Georgia.

6. What is your ideal Saturday? Sleep in with Kevin, enjoy coffee and breakfast, go do some outdoor window shopping (we have great outdoor shopping near us), come home, cook, drink wine and listen to music.

7. What is your favorite ice cream flavor?  Chocolate Chip

8. Who has influenced your life the most? Why?   Kevin.  He is the most supportive person, and he makes me want to be a better person.

9. Who is your favorite musician or band?  Ray Lamontagne

10. What is your favorite project or thing you’ve made?  My monogram H.  I just love it.

11. What is your favorite meal to make at home?   This is a hard one to answer…I love when we make Paella.  Country fried steak is a close 2nd…I am a southern gal.
