I love spaghetti squash. If you haven’t tried it you must! It is a good base for lots of different things, but I created a recipe that I crave often. It is very filling and full of flavor. First of all you need some spaghetti squash. Sometimes I can find a big one, but if I can’t I grab 2 small ones.
Once the squash is done, take a dish towel and grab one. They will be smoking hot so be careful. With a fork, scrape out all of the insides… it will look like spaghetti noodles. I scrape it right into a colander.
Add the squash right into the pan with the sausage and onions. I add about a teaspoon of oregano, and a teaspoon of parsley. You could really add whatever seasonings you wanted. I have also added a splash of hot sauce. Let that cook for a while just to let everything mix well. Turn the heat off and add about a half cup of Parmesan cheese. Just use whatever is in your fridge. I used grated, but have used shredded and even shaved parm. I will also add a big bunch of cilantro. I know people have a love hate relationship with cilantro, I LOVE it. Love it.
This really is a dish that is quick and easy. I really think you should give spaghetti squash a try. You can make this dish without the sausage, or add chicken. It is good with spaghetti sauce as an alternate to pasta.
This is good leftover, and leftovers = lunch for me!
Spaghetti Squash with Smoked Sausage
1 package smoked sausage 1 large spaghetti squash cut in half seeds removed 1 small onion, chopped 1 teaspoon dried parsley 1 teaspoon dried oregano 1/2 cup Parmesan cheese olive oil salt and pepper cilantro
Place spaghetti squash in a 350 degree oven and roast for about 45 minutes or until soft. Scrape out the squash into a colander. Meanwhile cook the sausage and onion in 1 tablespoon of olive oil until the meat is brown and onions are soft. Add the squash and mix. Add the oregano and parsley continuing to cook over medium heat for 10 minutes. Add salt and pepper to taste. Remove from heat and add the Parmesan cheese and cilantro.
